I have created a series of different downspouts using the pipe tool in the systems window.
They show up correctly in my plan and 3D views, however in elevation they just appear as single lines with no depth or width.
Would anyone know how to correct this?

Make sure the view is set to fine instead of coarse.
(or alternatively you can override just pipes to show as fine in your visibility graphics settings.)
If this project file is to be used for further development, including mechanical/plumbing design, I will suggest creating a generic model family to handle exterior, architectural downspouts.
If you're actually making a roof drainage system out of pipes, then carry on. But if you're talking about sheet metal downspout profiles, make a generic family, two level based, for them, otherwise you're going to screw up piping schedules and such. I say level based because I've found it easiest for me to just place them in plan view, then adjust the base constraint and top constraint to make them fit under the gutter and stop above the ground however I see fit.
