I recently had to do the same thing. We needed plans to take to the field to confirm dimensions so we wanted a dimension line without the text. My solution was to create a new dimensions line with the font size being 1/256". Even then I could still slightly see the text. If you then replace the text with a "." it becomes invisible. Its kind of a hassle, but it works.
