I was just wondering what is difference between the sub category of a cut line vs a projection line in Revit ?

Cuttable categories have Cut line/cut pattern, Projection line/ surface pattern for their subcategories.

Non-cuttable categories only have Projection line/surface pattern for their subcategories.

Cut line object styles automatically apply to model elements when they are cut by a view range cut plane, or by a section/elevation cut.  They can also be manually applied to linework/filled/masking region boundaries so you can present those items as being cut.
