Curtain system from mass - horizontal segments
If the approach is using a divided surface to define the curtain wall then you need to draw reference planes where the horizontal and vertical grids are, name them, and create a divided surface using Intersects. Turn on Nodes for the surface so that you can snap adaptive curtain panel and repeating them on the surface.
But, this is not the best approach if you only need horizontal and vertical grid curtain system on a flat surface. In such case, you don't need to create the divided surface, just use Curtain System tool in project environment to create the Curtain system by faces of the mass. It is more robust because you can set the grid spacing universally for the Curtain System, as well as Add/Remove/Relocate grid segments more freely using the native Curtain Grid tool.

The last approach you describe is excactly what I did. I modellesd a mass and assigned a "curtain system" to the face of it.
Then I click on the curtain system and choose "Configure Grid layout" - (the little icon that shows up in the middle of the curtain system):
But I can't figure out, how I get to edit the orientation of the segments - as I mentioned, I want them to be horizontal. I can see you have the option to adjust the angle on yours, but somehow that function is not available to me.
What do I need to click on to get this option?
Tried to minimize the number of divisions on the curtain system, but it doesn't change much..
Maybe I should add, that working with masses and curtain walls/systems is not something I have a lot of experience With.....

First question: have you created a DIVIDED SURFACE or a CURTAIN SYSTEM?
These are two VERY DIFFERENT approaches that create both curtain systems resembling geometry.
The correct workflow you should apply considering your project is to first load the mass family into your project, and then create a curtain panel system by picking faces. (Create > curtain systems)
I have the impression that you have used the "divide surface" tool in the mass editor.
That tool is made for creating VERY complex systems (complex curvatures, compex patterns) and requires a good understanding of how the patterns are applied. They will require pattern adaptative components as well.
If you want to have the same options as Toan, use a curtain system.
Geometrywise, pattern surfaces will adapt to the geometry, curtain systems will cut the geometry without taking much care of the surface curvature/specificities.

I just had a chance to open you attached file. The face is slanted and that's why the horizontal grids don't respect the curtain system grid rule. You may have to create a divided surface using intersects to define the horizontal grids (the first part of my first reply) unless someone can give you a better solution.

@Anonymous is right, on revit 2017 I couldn't solve this problem using your geometry.
But I found a solution (worked in my mind all night long)
Alright, basically you need the geometry to be perfectly planar.
So, in order to do that, I re-created an extrusion, then moved the top edge to create the slope.(1)
Finally, I substract a volume to make the height of the building skin variable as well.(2)
That way you garantee a perfectly planar surface
As you can see on the picture in light grey, when you create your curtain system, it works!
