I need to change everything within the level into black..

I am lost..

In your project browser go to families and annotation symbols, find the level head family you are using. Edit it however you want in the family file and reload it to your project file.

If you are showing what I think (Sorry, the language is foreign to me.), the blue is hard coded and means that there is a view referencing the level. It cannot be changed.

Hi, 

I am a few years late to answer but, have you tried checking manage - object styles - annotation object? Maybe the level head color is what you need to change?

The colour of everything within a level head, section head, callout, elevation pointer except the text items get overridden to be blue when there is a view associated. You can double click on a blue level head to open the associated floor plan.

 

This blue colour is unchangeable.

In the image there is a plan associated to the level 'Penthouse' so it is blue, all other levels remain what is dictated by the level head family.
