How to make 16 bit texture ?

Can I create my own 16 bit full hd texture in Photoshop for applying it on any object ? 

For example is it possible to make  16 bit textue of a apple in Photoshop

You don't need 16 bit images for texturing, they are just too big in general, 16 and 32 bit images are used for displacement maps.

just keep your work in 8 bit , unless there's a special reason otherwise  like HDRs .
