I'm working on a Lego man model and while I was adding bevels to the leg I accidentally missed an edge, and I only noticed now so I can't undo it. How can I go about fixing this problem?

You could use Mesh > Mirror to mirror the good side of the model to the bad side.
Depending on your needs you could mirror the whole object or cut out the bad part and just mirror that. (in which case you would also need to use Edit Mesh > Merge to reconnect the new faces)
