Connect a circle of vertices to merge to a vertex in the center

I extruded the top of a cylinder down into the cylinder, now I want to cover the hole by re-adding the top of the cylinder.  I've tried bridge, merge to center, merge, etc... (with either no result or some really wonky result) all the pretty easy to find buttons to get it to work.  How do I add a vertex to the center of all the other vertices and connect them to make the faces in order to make it like the original top of the cylinder?  Also, the first extrusion down I would like to add the same thing, not sure if the same method for the first one will apply to the second because Maya seems adamant on making everything as difficult as possible.

 

The piece I'm working on is a wine bottle with the top still on.  So, technically I'm just trying to make the top without the hole in it and give it a little mass by wanting to do that to the second extrusion as well.

 

I know that I could possibly not use extrusion, but stupid me forgot to increment and save after I made the bottle, and learning this may help in the future.

Mesh >Fill hole....any object with open end will be closed or parts of a mesh that has a missing  face or hole.

If you extrude the bottle without the faces on top then the bottle itself will be almost done with thickness, you just need to model the cap separately.
