So, what you say is that you dont have Create-> Materials -> Lambert option in the Hypershade top menu? Or you could not find lambert in Create Node.. window?

I cannot see Lambert in the Hypershade window when I go Create > Materials. Nor when I use the right click menu in the 3D Workspace. Is it part of an extension that I might be missing?

Sounds really odd. First thing to try in cases like this is to temporally remove (copy e.g. on the Desktop) your Maya env folder - user/autodesk/maya/20XX/ .. it will be recreated on next maya launch. Try yourself and report back progress.

When I open the file in question, I get a message saying "The Maya scene that you are opening or importing has unsupported nodes. Unknown nodes have been removed". Can't help but think that this may have something to do with it?

Did you try to remove env folder?

Just one file, or is the Lambert missing also in freshly open Maya?

Open the ScriptEditor and execute this line:

shadingNode -asShader lambert;

Do you see a new Lambert created?

Also, is the Lambert missing from RMB menu when you click on selected object? Assign Favorite Material -> Lambert.

Removing the env folder did not seem to fix anything. Lambert is missing in freshly opened Maya files, and the file in question. Tried running the code, which did create a material called "Lambert7" but it is of the type GLSL instead of Lambert. And Lambert is missing from the RMB menu also.

Couple reinstalls later and things seem to be looking up, I'll post back with some news if it works.

Autodesk suggests https://knowledge.autodesk.com/support/maya/troubleshooting/caas/sfdcarticles/sfdcarticles/Reset-May... as a fix. If it was not helpful, then the problem is more serious. Usually Maya spits out some error/warning messages on startup or executing code like you did before - not seeing those messages is a lot of guesswork, so I would suggest consider reinstalling Maya.

For starters, check your hdd integrity, run disk utilities to see if it is worth reinstalling. If there are errors, then fix and launch Maya again. If still missing shaders then go for reinstall.
