Why is this simple thing so difficult?

I just want to carry on quad drawing from the poly surface I have made across the mesh, so it is as one poly surface. It's almost like you have to do the entire retopology in one go because you can't carry on from where you are. 

 

I apologise for the hard to see images, I am also working against a model where it is so hard to see any of the details on for some reason. I have to turn it to the side to see where the eyes, mouth and lips are. 

 

Any help please?

I´m not quite sure what your problem is.
You can always continue your quad draw session from where you are.
You can even model something by hand and then continue it with quad draw tool.
As long as your model reference is in "live" mode,
when you select your model and then select the quad draw tool, you will be allowed to draw more polygons.
