I'm still very new to Maya and when I started messing around with the graph editor for a simple animation the curves started to all center at one point and I can't select that point or change it and it's defaulted that way so it happens everytime I open it. The point also moves around when I pan around the window, I'll include screenshots.
For an animation curve to show up as a line in the graph editor means that there is more than 1 keyframe. Usually when it appears like there's only 1 keyframe but you see the animation curve, it means that 2 keyframes are practically on top of each other. The difference being only 0.004. Select the "1" keyframe and zoom in by clicking "F". Once you can access the second keyframe, you can set it's value.
