The red highlighted joint keeps snapping whenever I bend it too far and I have no idea as to why. Any help would be appreciated, thank you.

There's something driving that "red" joint.  Animate the hand control rotation as you demonstrated.  Then at the frame when the "red" joint snaps, select the red joint and see what the rotation values are.  The "red" joint is probably orient constrained to something.  Maybe only constrained on a single axis?  And the constraint is gimballing causing the snapping?  Just an idea.   But select the "red" joint and observe the values through an animation.  That will lead you to the problem.

I'll definitely try that out! I did a ducktape fix method of just deleting it and recreating it and it worked out fine. But I'll definitely try out what you said because I'd rather know how to fix it for future situations in case the joint hierarchy will be less forgiving in terms of how I fixed it this time, hahah.

You won't believe how many times just redoing something has fixed issues for me.  Glad you found a solution.
