Not sure what you are trying to accomplish. You can change the View Cube and set your base view to what you want. If you are starting a new part, you have the option as to which Origin Plane to start your sketch/base part orientation.
For a flat part, your X and Y will be the length and width of the part while the Z will always be the thickness/height. This is the standard context for profile burning software, especially if you export to a neutral format.
