I don't have any other links to fully dimensioned assembly projects, but if you join one of the model engine hobby websites you can find plans for engines that have fully dimensioned 2D drawings for the entire engine assembly.
If you're open to projects other than engines, you can find a lot of fully dimensioned woodworking projects that can offer a challenge. Often a local library is a good source for wood working project books, or possibly metal working projects.
