I think I may have (in error) installed all language versions of Revit. On my start menu there are several. I don't need this, or want it. It's also probably eating up disk space. How do I go about un-installing all of these except English? Thanks in advance.

Sure, its pretty straight forward. You can uninstall the additional language packs, but not the default language of the product installer.

Um... this didn't work this way for me. (I'm on Windows 10.) If I go to Control Panel - Apps - I have the choice of uninstall or change. Change doesn't work because that only prompts me to re-install the program. I don't want that. Uninstall does not give the option to uninstall language versions only the whole program. That's not what I want either.
Revit is a "multi language" Install.
If you install Revit the resource files for all supported languages are installed and you can control the displayed language in Revit with the startup switch "/language DEU" or any other language.
But normally the default language depends on the operating system, you should not have shortcuts for all supported languages.
About which Revit version do we speak and have you installed Revit or someone else and the shortcuts are created manually or from another installer.
