There never was such an option so it cannot be missing. What type of sheet metal seam are your looking for, edge is not descriptive enough, give an example.

You can easily add a corner seam to your model, but then you cannot Create Flat Pattern, so it may not serve your purpose. You did not supply your model so I created a similar situation and added the corner seam. Not much use since this kills the ability to Create Flat Pattern. Model is attached.

My first question, What does this have to do with creating a Corner Seam in Sheet Metal? I will answer the question very easily but next time, create a new Forum post, do not piggy back unrelated questions.
Answer: I captured the screen you sent and added a red arrow pointing to the "Assemble" tools.
