I am trying to get the exact z distance between the top of the bowl and the top of the pipe (the highlighted line). How do I do this?

Your bowl is not very smooth on top, it comes to a point. Since you said you wanted to measure from the top of the bowl to the center fitting flange, that is what the video shows. I also point out in the video that your fittings are just floating in their position, you need to add some Joints to position them soon.
