I have a fully defined spline and offset spline (left figure), after trimming the offset excess segments (red circles) the offset spline loses its constraint and dimension (right figure). Is there any way to avoid this?

No, I have not found one. The best thing you can do is ignore the overhang unless it gives you an issue in other sketches or sketch profiles. The profile above is still usable without trimming.

In this model, the overhang of the offset spline is not hurting you. If you do not trim it, you can edit the offset dimension anytime you desire.
