The issue you are having with editing stuff I believe is caused because the part has no timeline. There are times when you do want Timeline turned off, but I'm not enough of a modeler to speak to that.
For the pocketing issue: just draw a sketch circle covering the slot. Select the inner (new) circle and the outer diameter:
