Trouble Engraving very Small details

I’m having a bit of an issue with getting either Fusion 360 or CarbideCreate to V - carve some very fine lines of a logo.

Logo looks like this:

I’m trying to V-carve all of the detailed/inner features on the olive leaves and waiter’s hands and serving tray… but F360 will only recognize a small % of the line segments… I do get this warning:  Open curves were selected. These will be ignored. However, there isn't much on google about that.

I've tired identifying the diameter of the tool tip as 0 as well as playing around with tolerance and angles... but I just can't get F360 to try and do the other line segments in the sketch... any ideas?

Simulations from F360 ignoring a good portion of the sketch:

For the open contours (those are these features here):

You are going to need to use the Trace toolpath, and a fair amount of manual selection. It would almost be better if they were ALL open chains, as you could then just select the sketch from the Browser menu
