Machining boundary - keep tool OUT of an area

How do I keep the tool OUT of the selected area and machine everything else? I have used containment quite a lot to keep a tool IN but find no option to do the opposite and machine everything? Gathering I have to create a large sketch around the part?

Ok, have done the aforementioned, and now this... *sigh*

There is not necessarily an explicit option to say "keep out," but there are a few ways to do it.

The first option is to continue selecting boundaries to define the area where the tool will end up in the boundary. Note that if 2 boundaries are selected, the result is that the tool is contained between the 2 boundaries. You can select the inner boundary (as in the picture) and then the outer silhouette as a boundary, the tool will be contained to the top face.

The second option is to cover the pocket with a patch surface, then include the surface body in the "model" section in the geometry tab. This will include the surface in the toolpath calculation and the pocket will appear to be filled when calculating.
