Delete Face the existing Chamfer and add a new chamfer.
(Or always work with Capture Design History - in which case simple Edit Feature.)

Unless I'm crazy I would normally be able to make a chamfer like that larger/smaller by using the Press/Pull tool. Any idea why I need a workaround in this case?

I didn't make the model, a customer sent us the STEP/SLDPRT.
Seems like as long as I select all the flat faces of the chamfer (or all round corners of the chamfer) the Press/Pull tool should have no issue with such a simple task. Pretty sure years ago [with design history not captured] I could enlargen a chamfer as long as I selected all flat faces of the chamfer (or all round corners of the chamfer).
Was this functionality removed, is it a bug, or am I misremembering?

Nothing has changed here, I am certain. No functionality was removed. If this is imported geometry, it is likely data specific. Fusion has code that is a "chamfer detector". If the geometry does not meet whatever definition of a chamfer it expects, the press/pull tool will not be able to modify it as a chamfer. There have always been models where this is the case. There is always the possibility of a bug, but without the model it is hard to tell...
What happens if you select all the chamfer faces and delete them? Does the model heal correctly? Can you re-add the chamfer, and if you do, does it function as you expect with Press/Pull? (as @TheCADWhisperer suggested). That would be my best recommendation, as well.

I'm confused about why you tried to press/pull the chamfer without selecting all of the chamfer faces. First, you selected only the long faces:
Then, you selected only the corner chamfer faces:
I would not expect either of those operations to work, and I believe they have never worked. The chamfer produces 8 faces. I would expect to select all 8 and to have that work. I don't have Fusion in front of me right now, but I will try to look at it later.

@jeff_strater What might be causing confusion is the difference between fillet and chamfer. With a fillet you can select just one fillet in a chain and it modifies the whole chain when you press pull but chamfer fails! Try the attached STP file.
