Use a sweep:

Notes:

Create an offset plane at the blade tip.

Create a sketch on the plane.

Project the blade body to the sketch.

Draw the desired edge profile.  I used a 3 point arc to simulate a hollow grind.

Create an offset plane (or midplane)  at the center of the blade.

Create a sketch on the plane.

Project the knife edge to the sketch (If you project the entire blade, delete all lines except for the edge lines).

Use a sweep to create the edge.

Mirror it to the other side.

I generally use draft when i do mine. But if yours has that much curve then sweep is really the cleanest option.

Chamfer wont work because your lines do not create a tangent chain. The sketch curvature is rather jagged and any modeling will reflect that.

And Patch > Loft doesn't do a bad job,

do yourself a favour and scale the canvass. (its called Calibrate)
