The ALT key. 

Here's some advice. As a beginner you should model 50-80% in box view mode, not in smooth view mode.

The author of that video models almost exclusively in smooth view mode. As an experience user he can get away with it. As a beginner it is very unlikely you will be able to get away with it 😉
