1- can the units be changed to inches instead of mm?

2- how can I incorporate raised lettering into my design?

Hi, you can edit document unit. FIrst move your mouse pointer onto the "Units" browser entry, a hidden button will be displayed and let you click it to pop up the "Change active units" dialog. Then you can switch the unit to your favorite one. See the attached shots.

For the 2nd question, I suppose you want to add a text emboss on your model. If it's true, now you can create a sketch based on your model face (or work plane), then add/adjust the sketch text into the sketch. Later you can extrude the text for embossing. 

Let me know if the intent is not what I guessed.
