I assume you mean part or mode rather than drawing (a drawing is 2D, an example is printing on a sheet of paper).
I am only familiar with (rectangular) Cartisian Coordinate System and Polar Coordinate System.
I assume what you really mean is you want Z to be "Up", "Up" is relative.
Can you right click on the View Cube and set as desired or set as desired in your Preferences?
