Probably a number of ways to do it, But this is what I would do. Create a line thru the area you want to cut. Create plane at an angle thru that line. Create a cut shape thru that new plan. Create an extruded cut of the shape.

Remember this is associative. Change the angle of the line and you change the angled plane. Change the endpoints of the cut curves and you have a new profile on the body. You can play until you gat a cut you like.

If you want to gain a little control over the edge created at the top, I would do the same as @mike.mattera, except instead of using a closed profile, draw a spline and use it to 'split body". that will give you a nice smooth transition on the top.

I like this method for the arm contour. It's quick, easy and adjustable. But I couldn't find a way to adjust the curve of the original 3 point arc.
