It would be pretty tough, yeah....I think I would probably handle it as an animation, if you really wanted to do it, but this is without joints, its just moving stuff about like in a stop-motion film.....not bad, but probably not what you'd like.
Incidentally - you CAN model a rack and pinion, I've attached a video to show how...but things get hairy when you might like to do a worm-gear, for example. We can't relate the motion of one degree of freedom in one joint to two different degrees of freedom in another. (For a worm gear: the rotation of the shaft would be related to the translational movement of the follower, AND it would be related to the rotation of the follower as well.
Fusion 360 has a limited set of kinematic and dynamic simulation capabilities, which are more or less in line with what customers seem to want. I'd like to see much more, but the usage of similar tools in the industry is next to zero...there is really only one major player in the market for multi-body simulations, and they haven't grown in 15 years.....
If you DO want more of this - then please be vocal! I'd love it. (But then - I spent the first half of my career as a simulations engineer. 😉 )
