Change default label settings in People module

Hi,

I´m doing some stuff in the people module (2019.1) actually and am wondering why the default setting in the "Create Person" activity is to assign the created Operator to the label "token.Patient" but in the most (sadly not all) other activitys and activity sets "token.Person" is expected by default.

@Matthew Gillespie might correct me on this, but I believe that if you are in the Healthcare environment, then those references should all be changed to Patient. If you are not in the Healthcare environment, those are supposed to say Person.

However, the text shown be default depends on the environment you were in when the activity set was created, and it doesn't change if you exit the environment. So if you are not in the Healthcare environment, when you drag objects out, they should say "person". If you are in the Healthcare environmnet, they should say "patient. Let us know about any mismatches you find. We have found some already ourselves, but we want to be sure to get all of them.
