Can anyone shed any light on why I can only get 2 Slope ranges in my analysis - even when 6 are chosen?

check the surface style, under analysis tab>slopes>group by. yours might be set to equal interval, change to quantile and run analysis again.

If the terrain consists of only a few and very flat triangles, it may not be possible to create as many ranges as entered. In this case, first check the surface statistics or post the DWG here.

Thanks for the fast response.

I am able to create a new style and to get it to work, but I can't see any difference in the 2 surface styles. I tested your theory on the limited triangles on a test surface and was able to produce the error as you have stated. this surface has a lot of triangles. I'm wondering if the surface style is corrupt.
