Windows 10 Civil 3D 2021
When trying to either switch profile view syles, edit profile view properties (specifically in this case, adding bands), or edit the profile view style, the program doesn't actually freeze or crash: it gets stuck with the circle "processing" icon, and will presumably never complete the command. You can hit "escape" and it will stop processing, but the task will be left undone.

This appears to be a bug that Autodesk needs to fix, but if anyone knows any tricks, I'd be glad to hear them.
It does the same for me (also 2021).
If I create a profile using the same alignment/surface but with one of our Profile View Styles then it works okay.
I would say your Profile View Style is corrupt somehow.
I installed the 2021.0.2 Hotfix (unrelated to my problem) shortly after my original post, tried again, and it predictably didn't make a difference. However, I just now re-opened the file again, and none of the problems I posted about are manifesting. Totally bonkers.
I guess that'll do for now as far as moving forward with my work task, but, regardless, I still would like Autodesk to reproduce the problem in the file I attached and make sure it is unambiguously addressed in the updates (hopefully coming soon).
I am having the same problem. I just created a profile and profile view using the awful defaults and am now unable to edit the profile view style. A person ends up wasting so much time on formatting as it is in AutoCAD products and now this. This default is awful and there is no way I can present this garbage to a client.
