Is there a way to set up autocad to automatically annotate a line after it is drawing.  Meaning labelling bearing and distance automatically.

If you make them parcel lines you can. Just check Automatically Add Label Lines.

Note, this only works if the selected objects form a parcel.  If they're just open line work then no labels are applied.

My Velcro Sneakers make up for the lost time 😂

sorry couldn't resist.  Use polylines and label multiple segments

You can label your line work. The labels do not automatically appear. You is still have to use your mouse to select which lines get labeled.

I think what we are all saying here is that the product, as-is/OOTB will not automatically label lines either while being drafted or after drafting globally.

You cannot "Automatically Annotate a Line" that you draw.

     -  However  -

You can "Automatically Line an Annotation" that you place.

Create a "Line between 2 Points" label, that includes a line.

Other options:

Include a circle block at the start and arrow head block at teh end for a directed distance (ray) label.

Make the bearing visibility false and add arrow head block at start and end for a mock dimension.

etc.  (These labels automatially scale but do not have the full capabilities of annotative components.

Limitations:  The label text components and line component will be on the same layer.
If using wide lines, true type fonts may be work better than stick fonts.
