Custom Checklist Templates and having a drop-down list option

We are busy exploring using checklists to be used as a site diary for a construction project, as the daily log options are too limiting in terms of information that can be added.
When creating your own template, both the Section- and Item titles/names has to be pre-entered to which you can create a response in your checklist. Is there any way that the item title can be set up in the template to be a drop-down list from which you can select whilst creating a checklist? For example, when adding roles, when you have to enter a company name an automatic drop-down list appears from which you can choose. This is to eliminate the process of having to manually enter a name or title and rather select one to which you can create a response.
To further clarify, say for instance you want to create a site diary for your suppliers: you want to have the various company names, the person in that company on site's name, and their working hours, ie. start, stop and hours worked logged. The option of having a drop-down list in your item title would be great instead of having to add this as a separate item to which you can create a text response and add the rest of the information as additional items following on this. For example, now the only option you have is to first add the company name as an item (1.1) and assign a text response to it in which the name of the company has to be entered. Second item would be the person's name and again a text response. Item 1.3 would be "time started" to which you would assign a number response. On this, it's also not possible to type anything else than a number, eg. you want to specify the hour 08:00 or 16:00.
Any insight or help on this would be great.
