The Out Of The Box specs/catalogs included with Plant 3D are a starting point, not a complete collection of every valve and piping component.
You can easily create a SWxTHRD gate valve but it will require an understanding of how the catalog and spec builder operate, how P3D uses/identifies objects and end codes and how ultimately that gets translated to an isometric.
Likewise you can create virtually any kind of pipe (or piping component for that matter).
In the attached screenshot note the circled items. Open spec editor and go to catalog editor. Here you can select a gate valve that meets your basic requirements. Duplicate this component. Change (1) port end type to SW and (1) to THRD. After any other modifications have been completed save to catalog. This valve will now be available to add to your spec editor.
As @h_eger has stated, if you are just getting started with P3D, a formal training class would not be an unwise decision. Without training/years of experience expect a very bumpy road ahead.
