Hi...I'm only just getting to grips with annotative text, dimensions and blocks.

I need to start from the basics- which annotation scale should model space be in- I have seen on some videos that 1:1 is not good - is that right?

"Good" depends on what you are doing.  For example, I do a lot of schematics so 1:1 in model space is appropriate.  Same thing with detail sheets containing sketches (not to any scale, only proportion).  For our plan drawings, maybe not so much; however we normally do our scaled drawings through viewports into paper space.  The annotation scale is applied to the viewport to ensure consistent linetype scaling with text and other annotations in the layout, while the viewport scale handles the scaling the physical objects.

The scale in model space only affects the way annotative objects show up in model space. Say you have a viewport in paperspace that you want to be 1/4"=1', but you noted the drawing in modelspace with annotative text. If you set the model space scale to 1/4"=1' then the text will show up how it will look in the paperspace viewport. You can do this so you can place the text and move it to the correct places.  The reason  to change the model space anno scale is if you have many paperspace viewports with many different scales, but you noted everything in modelspace, changing the scale in modelspace will let you see how it looks in paperspace with correctly scaled text.
