As "Symbol" In most cases a block is used for something that represents geometry (and attributes) which is a default object used multiple times. So for in most cases here we speak about the usage of creating blocks (command _BLOCK) and inserting blocks (command _INSERT) ... >>>more details<<<.
The opposite for "Symbol" as block could be a shape, which also can be used as symbol, but that's more for creating complex linetypes. So I would start with the block mentioned above.
