I Just called Find and Replace command in a table like this. It's took 1.5 hours to finish.
There is no option in the Find and Replace Tool to cancel the function if required.
I don't know what complication exist in this function and why this much time eating by AutoCAD?
One more issue:
I could not able to work simultaneously with other software while using AutoCAD publishing process since the focus always kept in AutoCAD itself and so minimizing other software windows automatically. I am always waiting up to finish this process in order to start work in other software or Windows explorer.
We are using AutoCAD 2018.

Have you tried to press esc keyboard button OR press the X at upper right of Find and Replace dialog?

1.Have you installed all 2018 updates? Post screen capture of About command
2.Does the problem not occur in a particular dwg?
3.Have you tried command in a dwg with one text object to see how long that takes?
4.What is your Windows OS?

Like what [if you meant the table is like something, rather than just the entries in the FIND dialog box]?. Can you post a drawing file in which this happens?
This issue occurring only in drawing having AutoCAD Table.
In my case, i have an Table with 259 rows and 4 columns.
For one drawing/one text, no need of Find and Replace function. DDEDIT is enough. Though I don't know to how to calculate the time taken for one.
OS we are using : Windows 11 Business

You may want to install 2018 updates. You currently have the first release without any of the many updates applied which may resolve your issue. Check out this chart that shows the first and last 2018 build number:

Up to now, we are not getting any notification about AutoCAD 2018 update. Anyway, let me check and update if applicable.
Looks like something has fallen through the cracks. The last 2018 update was announced many moons ago

I’m not speaking any low words. “Fallen through the cracks” means just that. I’m not referring to illegal software. I’m referring to the fact that some mechanism has failed in notifying your organization of the updates not once but multiple times for AutoCAD 2018. It’s worth investigating.

We are using certain EXE which are developed in 2018 versions. We don't have support to convert those program's into latest version.
