No relation to office version. The OLE-object you embedd into MS-Word (or other applications) knows either the type of the object (e.g. "Image") or the type of application to open the file (e.g. "AutoCAD.Application").
As Images like JPG or TIFF are not related to specific versions or programs it's easier to get this working on other computers with different installation of image editing applications.
For object types like AutoCAD it always uses the format of your AutoCAD application to make sure all geometry entities can be imported when you try to open the CAD-OLE-object again for editing.

It is not a problem of how OLE works in general, the issue you have is that objects you copied from AutoCAD 2018 (or newer) to MS-Word can not be opened in AutoCAD 2017 and older, just because the OLE-object has a different type/signature for the application you need to open this embedded data.
