Any modification I make to one layer is immediately absorbed by the other layers. Let's say I have a layer "walls" in white and a layer "windows" in green, when I draw on layer "walls" in white, the walls drawing appears in green on the layer window.

What is the "layer window"? The editor? Model or Layout tab?
Is the color of the object ByLayer, or green?
If green: Check your CECOLOR setting

I think @cadffm is correct, you need to check where you change the color for Layer.
If you change it here on Properties palette:
Then it is not a correct way - you change Current Color for all objects - CECOLOR sys var, but not for particular Layer.
If you want to change the color of the Layer, you need do do this on Layers palette by picking on Color swatch:
