This can easily be accomplished through the use of MULTIPLE BOM. When you
select the catalog entry for your initial relay, you would have a pinlist
assigned saying that it could have "blank" number of contacts. When the
need arises for additional contacts, you would go back to the coil, and
select MULTIPLE BOM, and select a catalog entry for the AUX CONTACT block.
This entry would also have a pinlist assigned to it and when selected using
the MULTIPLE BOM, AutoCAD Electrical will adjust the pinlist and number of
contacts allowed on that coil accordingly. This works very nicely and I
think it will be exactly what you are looking for.
