Is AutoCAD a good option for trying to build a Network Architure?

No.

AutoCAD Electrical is primed for drawing industrial control schematics, with some basic abilities to integrate pneumatic and hydraulic drawings. It has no tools dedicated to anything ethernet-related, it doesn't even know what an IP address is, and can't tell the difference between, say, DLR or star topologies. There are no symbols included for ethernet devices such as hubs, switches, or routers, and the tagging system wouldn't be able to accommodate the needs of a network drawing.

So what is everyone using to document their networks on project drawings?

I don't know about anyone else, but my network drawings are basically drawn as if I were using Vanilla ACAD. There's no linking back to the schematics or anything. I just represent the tags of the devices as they exist in the schematics and show graphics or images of the devices with polylines connecting them. There's no automation or commands supplied by ACADE to help with this. It's completely manually drawn.
