The initial default size for a Door will be the size last used. AutoCAD Architecture makes it possible to specify standard sizes and makes it easy to choose one for styles that have standard sizes specified, from the drop-down list on the Properties palette (Design tab, BASIC category, Dimensions subcategory, Standard sizes property). When grip editing the width or height of a Door in the model, standard sizes are shown graphically by lines and the cursor will snap to them.
How are you adding new Doors? If you are using a tool palette tool that specifies a particular Door Style, you can also set a standard size as the initial default value in the properties of the tool. That will take precedence over the last size used (and will not reset the default value, either). That could be one way to avoid accidental placement of a Door with a non-standard size. There is no way to prevent a user from entering (or grip-editing) a non-standard width or height, however.
