height is not static value by default. You  SHOIULD assign it onece for  wall and draw it , then to obtain resalt you wish just choose the wall and use "add selected" in context menu

Right click on a tool that you want to make a custom version of on your custom palette, and choose Copy from the context menu.

Switch to your custom palette, which I assume is editable.  Right click in a blank area on the palette, and choose Paste from the context menu.  A copy of the original tool should appear on your palette.

Right click on the copied tool, and choose Properties from the context menu.  In the Tool Properties dialog, you will see a number of properties for which you can set values for this tool.  The specific properties will vary with the object type the tool creates.  You will find Width and Base height in the Dimensions category of a Wall tool.  Note that the Width property may be grayed out, if the referenced Wall Style does not have any variable-width components.

As @brian_adams mentioned, the Base height property value in Wall tools is often left as --, which means "use the current default height," to make a single tool applicable to many situations where that Wall Style could be used.  But if you have a particular task at hand where you want 9'-0" high Walls of a specific style, and do not want to make 9'-0" your default Base height value (or rely on it being set to 9'-0"), then creating a custom tool with the Base height hard-coded to 9'-0" is perfectly acceptable.  Using such a tool will not reset the current default height.

As for avoiding hatches, that is more a display thing.  If the source Wall Style is set up to display hatches, then your copied tool will pull the Wall Style from the same source, and will likely display with the same hatches (when the same Display Representation for Walls (and, possibly, Material Definitions) is active.  If I had a need to have two similar Walls, one with component hatches displayed and one without, I would create a second Wall Style (probably starting with a copy of the first one), and then edit the copy so that it did not display component hatches.  Depending upon how the original Wall Style was set up, that could involve changing the Material Definitions assigned to the components, or editing the style-level display overrides for the Wall Style.
