Is it possible to access theses, create/set Metadata on 'defaultArnoldDriver' using python?
You can set defaultArnoldDriver.customAttributes
It's an array of strings, like "asdasd INT jjkljk"
The UI won't update automatically though

Not only the UI doesn't update automatically, it even doesn't, if we unselect 'defaultArnoldDriver' and reselect it.
Is there a way to force it to update?
If you set the renderer to Mayasoftware and back to Arnold you see the new values.
