You can add a color_correct shader before the utility shader. This tutorial might also help.

Thanks for replying, but I'd also like more flexible control, such as a jitter node like Redshift's that has the flexibility to read and control particle colours. I hope Arnold has considered this aspect as well.

I did a test with color_jitter here that seems to work.

I believe the color jitter should work fine on particles. How to use it, depends on the instancing mode. If you generate the default spheres or quads, you need to set the parameters under the Face group (as particles exported as points within a single object). If you generate custom shape instances, then you have to set the parameters under the object group (as each instance is a separate object).

Set the Gain/Hue/Saturation under the Object group in color jitter, like this:
