I'm using the Drawing process for creating the drawings from my model.
when I make sections it creates them by default as 1:10 how can I change this default to 1:5?
also, is there a way to create sections after creating the drawings with the 1:5 scale as default instead of the 1:10?

Looks like you cannot change the default scale.
This is directly from the help documentation:
"The default scale is an intelligent setting that uses the scale of the view selected for the manual cut view. Using the default scale allows you to create manual cut views (that use the scale of the main view) faster, without the need to manually match them afterwards"

the default means: the scale which is set in the detail style is used. So for such often used commands it could be done with a specific detail style:
And if you use this often exact like this, a button with this command is very powerfull. Therefore, just select the dewtail style one time and have a look in the command line which key is used:
Now you could create a button with the command: _AstM4DetManualCut;R;22006;
Now you could easy clcik on the button with the correct detailstyle and correct scale.
