I have a sky spherical map assigned to a bitmap applied in the environment material slot. Then I rendered a camera view looking at a vehicle side mirror. The sky as seen in the mirror is pure white. The environment map doesn't show up in the mirror. The mirror material is a Standard Surface Arnold material. Metalness set to 1. Spec Roughness is 0.
Anyone know why that is?

Here the described material-settings and an environment-texture were used:
Works great, the environment-reflection is visible on the sphere.
Your problem seems to be caused by something else.
Try switching the environment to another texture for testing or check the exposure-control (if used), maybe it's too bright.
I had the same post in the shader forum. (or the main post if I am not correct about which post this is)
It was answered and accepted. You increase the Custom Resolution amount in the Advanced area of the Arnold Environment rollout in the Render Setup tab.
