How do you model ?

How do you model with polygons, splines or something else?

You go on Youtube and do a bunch of tutorials on "Modeling with 3ds Max." Really, that's how you learn and how most of us who are "self-taught" learned Max. Autodesk has good tutorials and Udemy (wait for the monthly sale period) has a bunch of excellent beginner tutorials. Max a a very mature software. There are 100s of 1000s of tutorials and posts for beginners and above. Just search the web, they aren't hard to find.

It depends on what I'm building, but usually I start with an extruded shape and convert it to an Editable Poly.  Then add edge loops, push/pull faces, etc.

 

Occasionally splines will work better, typically when modeling a terrain surface.
