Model Resolution for Animated Film

There is a lot of information on the low resolution workflow for games. However, information on the film workflow is a bit scarce.
I am working on an asset for an animated film. Do I model, UV, bake maps, etc. at a medium resolution and render at high? Or, do I model, UV, bake, etc. at a low resolution and render at high?
If the answer is low resolution, here is a follow-up question...
Are UVs on low resolution assets smooth enough for a film asset?
Any advice is appreciated.
