Option 01: you know the angle of the roof.
You can create a special "loadable family" based on the out-of-the-box template and replacing the rectangular void already existing in the template by a triangular void extrusion with the roof angle (...and modeling the sweeps of the frame...)
Option 02: you can create an inplace family in the project environment based on the roof geometry and using again a void extrusion (...and modeling the frame...) etc.

Was able to create new window family in the shape I wanted, but it just put a hole in the wall of the right shape. How do I get the window with sill, jams, header, and glass??

You have to model everything from scratch inside the family using solid modeling tools such as sweeps and extrusions.
